Why We Love This Coffee
Juhong is our Sidra from Jhoan Vergara at Finca Las Flores. We chose it because it stands apart from other Las Flores releases. The processing is advanced and carefully managed, yet the cup stays incredibly clean, sweet, and expressive. It is a clear showcase of Sidra at its best. We called it Juhong because of the flavours it represents. To us this coffee is delicately floral, with a sweetness like red dragon fruit, this flavour profile is reminiscent of Chinese flavours, which is why we chose this name.
Origin — Acevedo, Huila, Colombia
Finca Las Flores sits 1800m above sea level in Acevedo with cool nights and steady rain. Slow cherry development and careful picking give dense seeds and a tidy raw profile that supports precise fermentations.
Producer — Jhoan Vergara
Jhoan and the Vergara family run Las Flores with a measured, lab minded approach. Cherries are screened, fermentations are logged and controlled, and drying is protected. The goal is repeatable clarity rather than noise. This lot is a strong example of that intent.
Varietal — Sidra
It is commonly described as a hybrid from the Typica–Bourbon lineage, which matches how many farms and importers present it. At the same time, genetic looks suggest affinity to Ethiopian landraces, so the exact parentage may include heirloom material rather than a simple two-way cross.
In the field it is typically a tall, vigorous tree in the Bourbon/Typica group. Plantings began in Ecuador and are now established in Colombia, with wider adoption across high-elevation sites as producers seek distinctive, high-quality cultivars.
Processing
Ripe cherries are hand selected, then rested 18 hours in permeable polypropylene fibre bags. They move to 200-litre plastic barrels for a 36 hour anaerobic stage without water. After flotation to remove defects and pulping, the parchment undergoes another 48 hour anaerobic fermentation. A warm thermal shock wash at 35 °C follows to set aromatics. Drying is 12–15 days under solar parabolic canopy dryers, with regular turning.
Tasting Notes
As a pour over it feels delicate yet complex, with rose up front, then red dragon fruit and watermelon, finishing clean with sweet blood orange accidity. As espresso it stays bright and silky with a focused citrus line, and in milk it remains gentle and floral.
