Why We Love This Coffee
Kurenai is our Ombligon from Jhoan Vergara at Finca Las Flores. Marcus found Jhoan while hunting for a competition coffee and kept returning to Las Flores for how focused and expressive these lots are. This is a rare variety handled with intent. It shows just how far controlled fermentation can be pushed.
We called it Kurenai because it carries a deep crimson energy in the cup and feels alive with dark fruit.
Origin
Acevedo in Huila, Colombia. Finca Las Flores sits at 1700 to 1780 masl. The farm works within a climate of cool nights and steady rainfall that supports slow cherry maturation and dense seed development.
Producer
The Vergara family has grown Finca Las Flores from a small holding into a diverse farm with a strong quality program. Jhoan leads quality and processing while Carlos and Diego manage operations. Their approach blends traditional farming with measured, lab minded fermentation.
Varietal
Ombligon. The name comes from the navel like shape of the cherry and seed. It is a rare selection with Ethiopian heirloom ties and apparent lineage with Caturra, Pacamara and Bourbon that brings helpful disease resistance.
Processing
Ripe cherries are manually selected and then rested for 18 hours in permeable polypropylene fibre bags. Cherries move to sealed 200 litre plastic barrels for a 36 hour anaerobic stage without water. After flotation and pulping the parchment undergoes a second 48 hour anaerobic stage. A warm thermal shock wash at about 35°C follows to set aromatics and prepare for drying. Drying happens under solar parabolic canopy for 12 to 15 days. The lot then rests, is hulled and sorted with full quality control before export.
Tasting Notes
Your cup will read high intensity from aroma through finish. Blackcurrant. Purple grapes. Grapefruit. Passionfruit. On filter it is very floral, very sweet and layered. As espresso it is concentrated and sweet and it cuts through milk clearly.
