Why We Love This Coffee
This is our first coffee from Indonesia, and our first Liberica. We chose it because it feels completely different from almost anything we have offered before.
Liberica is often overlooked in specialty coffee, but this lot from Wandhe Family Estate shows why it deserves more attention. This coffee is distinctive, expressive, and genuinely surprising.
Lot 21 is a Mossto Natural from Wonosalam, East Java. It combines the unique character of Liberica with a 168 hour fermentation using mossto, a liquid taken from a previous coffee fermentation. The result is a coffee that feels experimental without being messy. Big personality, but with clarity.
We picked this coffee because it reminds us why we love searching for unusual lots. It is rare, memorable, and a beautiful example of producers pushing coffee forward in their own way.
Origin
Wonosalam, East Java, Indonesia. Grown at around 600 masl by Wandhe Family Estate.
This region gives us a very different expression from the high altitude Colombian, Ethiopian, and East African coffees we often work with. Rather than chasing the same familiar profile, this coffee offers something deeper and more unusual. It speaks to Indonesia’s long coffee history while showing a modern direction for specialty processing.
Lot 21 represents a post-harvest exploration from Wandhe Family Estate. It is not just about producing Liberica. It is about asking what Liberica can become when handled with intention, clean fermentation, and careful drying.
Producer
Wandhe Family Estate is based in Wonosalam, East Java. Their work with this lot shows a strong focus on post-harvest innovation and quality improvement, especially with Liberica.
For us, this is the exciting part. Liberica is not commonly seen on specialty menus, and when it is, it can sometimes be polarising. Wandhe Family Estate has taken that unique raw material and used controlled fermentation to character to an already unique cup profile.
This lot shows local producers taking ownership of their own processing style and elevating a species that deserves a much bigger conversation.
Varietal
Liberica. Specifically, this lot is made up of SL 45, ST 77, and Dusky.
Liberica is a different coffee species to Arabica. It grows differently, looks different, and often tastes different. The cherries and seeds can be larger, and the cup profile can carry deeper fruit, florals, spice, and a distinctive sweetness that does not quite sit in the same lane as Arabica.
That is why we wanted to bring this coffee in. It is not just another rare variety. It is a different species altogether, and it gives us a chance to show another side of what coffee can be.
Processing
Mossto Natural. 168 hour fermentation.
Mossto is a fermentation method inspired by winemaking. It uses the liquid from a previous coffee fermentation, often called mossto or must, to help start and guide the next fermentation. That liquid is rich in natural microbes, which can make the fermentation more active, more consistent, and more controlled.
For this lot, whole Liberica cherries are fermented with mossto for 168 hours before being dried in the full fruit as a natural process. Because the cherry remains intact, the coffee keeps the fruit intensity and sweetness. The mossto fermentation adds another layer, helping shape the cup with more structure and a clearer fruit clarity.
This is what makes the coffee so interesting. It still tastes unique and unmistakably different, but it does not feel rough or uncontrolled. The process gives the coffee clarity while keeping the character that makes Liberica special.
Tasting Notes
This coffee is bold, unique, and vibrant.
Expect a cup that sits outside the usual Arabica flavour spectrum. It is fruit driven, aromatic, and distinctive, with the kind of character that makes you stop and think about what coffee can taste like. The Mossto Natural process brings sweetness and fermentation complexity, while the Liberica gives depth and a darker structure. Our team experienced sweet red berries, asian tropical fruits and jackfruit in the cup.
On filter, we recommend brewing it for sweetness, roundness, and clarity rather than pushing it too hard. Let the cup cool and open up. This is the kind of coffee that changes as it sits.
